I don't neseceraily think that the entestins could tell a prophasie or the future, but I could understand why they thought that. They could use an unusual vein pattern or way an organ looked. They could've related these things to every day life, like if one of the veins looked like the tree in someone's backyard, they might predict that the tree will fall down on the house if not removed.
i think that they thought that the inards and intestines of an animal could have predicted the future or show signs of wat might happen if the body has infected, the people thought there might be a plague, or if the body was dry and rotten, there might be a drought or shortage of crops. Don't forget that the people back then were highly superstitious.
The intestines might have been the only part of an animal they couldn't use, so they used it for prophecy. Also, since it was strangely shaped, they might have thought that it contained magical properties.
I don't think they actually could tell the future by the intestines of the animals. They believed in superstion and magical powers, so they assumed that the intestines could tell the future when they really couldn't.

I think that since the intestines did not serve any culinary purpose, and the people didn't fully understand what intestines did, intestines assumed a sort of magical quality. An otherwise non-superstitious people would have left it alone, but since the Roman civilization was highly superstitious, anything being mystical or magical would probably immediately become an object of superstition.
I think that the intestines of animals could predict the future because the Italians didn't know what it was used for, and naturally they assumed that it had some magical quality to it. The Italians also had a superstitious reputation. Maybe, like current fortunetellers predict our future from the patterns on our hands, the Italians observed patterns on intestines to predict good or bad.

i think that the gust inside the animals couldn't be used to predict the futer, and the Etruscans just haven't seen the inside of a animal alot
