The religion could've changed because they had nature gods, but they needed gods for dancing, food, art, and other aspects for every day life. They could've converted the "Nature Gods" into dayly life gods with the aspects of nature included in the worships.
some of the gods were still connected to nature, they just had powers more relevant to the daily life of the greeks and romans. nature was still very important, but to evolve and grow as a civilization, they had to explore different aspects of their more advanced lifestyle.

And also when they changed rule they were under the influence to worship more human like gods, instead of more like animal gods.
