I think that the Persians didn't attack Italy because to get to Italy they would have to travel right past Greece, which they were never able to defeat.

They knew that if they couldn't conguer Greece, Italy would be a tough bet, since Italy had developed such a powerful reputation. The Persians may also have been trying to recover from their previous loss to the Greeks.
